One recommendation: Use a very firm non-jelly like tofu. (The coarser textured stuff vs. the smooth or silken stuff.) I recommend Soy Boy Low-Fu (lol, reduced fat, stupid name) or WFM brand Extra Firm. DON'T use Nasoya. Icky. Or the little 12 oz boxes. Also icky. Soy Boy is my brand. Nice and firm, almost meaty.
