Strawberry Spinach Salad - Double Recipe

INGREDIENTS:

1/2 cup sugar
4 tablespoons sherry or white wine vinegar
1 tablespoon sesame seeds, toasted
1 tablespoon olive oil
2 teaspoons minced red onion
1 1/2 teaspoons poppy seeds
1/2 teaspoon Hungarian sweet paprika
1/4 teaspoon salt
12 cups torn spinach (about 2 pounds)
4 cups halved strawberries
4 tablespoons slivered almonds, toasted

INSTRUCTIONS:

  1. Combine the first 8 ingredients in a jar; cover dressing tightly, and shake vigorously.
  2. Combine the spinach and strawberry halves in a large bowl, and toss gently.
  3. Pour the dressing over the spinach mixture, tossing gently to coat.
  4. Spoon 1 cup salad onto each of 12 plates; sprinkle each serving with 1 teaspoon toasted almonds
