Party Spinach Dip

Comments from a PA Kitchen: This is Cooking Light's version of the spinach dip that you find in a bread bowl at every family picnic and pot luck dinner. You know which one I mean--creamy dip with spinach with water chestnuts, etc. I admit it: I love the stuff. This tastes and looks and acts exactly like the full fat version. A serving size is 2 T. but you can have a full quarter-cup for 1 point as well.

INGREDIENTS:

1 (12 oz) carton 1% low fat cottage cheese
1 (10 oz) package frozen chopped spinach, thawed, drained, and squeezed dry
1/2 c. low fat sour cream
1/4 c. dry vegetable soup mix
2 tsp. grated fresh onion
1 tsp. lemon juice
1 (8 oz) can sliced water chestnuts, drained and chopped

INSTRUCTIONS:

  1. Place cheese in a food processor; process until smooth, scraping sides of bowl once. Place in a medium bowl.
  2. Stir spinach and remaining ingredients into cheese. Cover and chill.
  3. Serve with unsalted crackers, breadsticks, melba toast, or raw vegetables
