Orange-Glazed Carrots

Yield: 5 servings (serving size: 1/2 cup)
Comments from a Kitchen in NY: Delish! My young son had a friend over for dinner and her mother had prefaced her visit with, "Put whatever you want in front of her, but I doubt she'll eat it." She had two helpings!


2 tablespoons butter or stick margarine
1/3 cup honey
2 tablespoons minced fresh parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon imitation orange extract
Dash of dried thyme 1-1/2 pounds baby carrots


  1. Preheat oven to 375 degrees.
  2. Place butter in a small microwave-safe bowl; microwave at high 20 seconds or until melted. Stir in honey and the next 5 ingredients (honey through thyme).
  3. Place carrots in a 1-quart casserole, and pour honey mixture over carrots. Cover and bake at 375 degrees for 1 hour or until tender
