Amy's Marinara with Artichokes

Yield: 6 generous servings

Amy's Comments: Ok so I needed to be creative and clean out the pantry ... so I
created a yummy new pasta sauce! I ran it through recipe builder and it came up as 2 points/serving for 6 servings (if you use
PAM instead of EVOO it would only be 1/serving). I served over whole wheat rotini and I was STUFFED!!
INGREDIENTS:
2 cloves garlic, minced
2 tsp olive oil
1 medium onion, diced
3 14.5oz cans diced tomatoes (I used 1 can with basil, garlic, oregano and 2 regular cans), undrained
1 8 oz can tomato sauce
2 14oz cans artichoke hearts (not in oil), drained
1 tsp dried oregano
1/4 cup chopped fresh basil
salt and pepper
INSTRUCTIONS:
- Heat olive oil in pan over medium high heat. Add garlic and saute for
30 seconds (until soft). Add onions and saute for about 2 minute (also
until soft but not brown).
- Reduce the heat to medium. Stir in canned tomatoes, tomato sauce,
oregano, and basil. Simmer for 15-20 minutes until sauce is thick and
bubbly and your house smells yummy :)
- Reduce heat to medium-low. Quarter the artichoke hearts and add to
sauce, stirring gently. Allow sauce to simmer for 10 more minutes
until all of the flavors have had a chance to nicely develop. Season
with salt and pepper.
- Serve over pasta and top w/some more fresh basil and some parmesan
cheese (but count points for both the pasta and cheese!!)
