Holiday Hot Fudge Ice Cream Cake

Amy's Comments: This is a creation of my Mom's. So decadent, very festive, but really rather easy to make! My advice - read
the instructions all the way through before you get started. I wrote these out the best I could, but you can do a lot of the steps all at the same time!
INGREDIENTS:
Chocolate Chip Cake
1 pkg. chocolate cake mix
1/4 c. vegetable oil
2 eggs
1 1/4 c. water
1 pkg. instant chocolate pudding (4 serving size)
1 c. chocolate chips
half gallon of red peppermint or green mint chocolate chip ice cream
Whipped cream
Hot Fudge Topping
1/2 stick margarine or butter
2 T. cocoa
3 T. milk
powdered sugar
INSTRUCTIONS:
Prepare the cake:
- Mix the cake mix, vegetable oil, eggs, water, pudding, and chocolate chips.
- Pour batter into a greased 13x9 baking dish.
- Bake at 350 degrees for 35-45 minutes.
- Cool completely in the pan.
Next steps:
- While the cake is in the oven, set the ice cream carton on the counter and allow the ice cream to soften.
- Place a layer of waxed paper in the bottom of a 13x9 baking dish. Spoon the ice cream into the dish and flatten out with the back of a spatula.
- Place the ice cream in the freezer for a few hours until solid (very hard).
- Once the cake is cooled, remove it from the pan and put it on a cutting board (something solid - do NOT use a cooling rack! I learned that the hard way...)
- The ultimate goal here is to cut the cake longways down the middle, take off the top, put the ice cream inside and put the top back on. For me, it helped to cut the cake down the middle (short ways) then cut it in half longways.
- Once the cake is sliced, take the ice cream off the waxed paper, put inbetween the layers of the cake, put the lid back on the cake.
- Slice the cake into squares (use a serrated knife - make them as big or small as you want) and wrap in waxed paper. Place in the freezer until you're ready to use it!
Prepare the hot fudge:
- While you are making the hot fudge, put the cake squares on the counter to let the cake thaw a little.
- Melt the 1/2 stick butter over medium heat. Add cocoa and milk.
- Add powdered sugar until you get the desired consistency. If it gets too hard, add a little more milk!
Finish the masterpiece:
- Drizzle a little hot fudge on the plate.
- Place the cake on the plate. Top with more hot fudge and whipped cream!
