Grape Tomato Salad



Yield: 8 servings at 1/3 cup each

Amy's Comments: This was the sidebar recipe to go with the greek steak pitas with dill sauce. I thought it would make 4 servings, but a 1/3 cup serving (8 total servings) was plenty. This is a nice fresh but tart side dish! I made this and put in the fridge to allow the flavors to meld some.

INGREDIENTS:

2 cup grape tomatoes
1 1/2 cups chopped English cucumber
2 tbsp chopped green onions
1/4 cup balsamic vinegar
1 tsp sugar
2 tsp olive oil
1/4 tsp black pepper
1/8 tsp salt

INSTRUCTIONS:

  1. Place tomatoes, cucumber and green onions in a medium bowl - toss gently to combine.
  2. Combine balsamic vinegar, sugar, olive oil, pepper, and salt in a small bowl and stir with a whisk.
  3. Drizzle vinaigrette over salad; toss gently to coat
