Grilled Pork Tenderloin with Apple-Ginger Sauce


Yield: 4 servings (serving size: 4 ounces pork and 1/4 cup sauce)

CL Comments: Serve with couscous or rice to soak up the spicy-sweet sauce. Try peach or apricot jelly to vary the flavor of the sauce.
Comments from a PA Kitchen: I realized only after I had the pork on the grill that I was out of apple jelly so I used apple butter. I brushed the pork with a little of the sauce right after it came off the grill. Then I heated the rest of the sauce in the microwave for 30 secs before I served it on the side. (Seemed weird to serve it cold to me.) The flavor was delicious, but I think that even with apple jelly, 1/4 cup per person would be a LOT of sauce.

INGREDIENTS:

3/4 cup apple jelly
2 tablespoons minced peeled fresh ginger
2 tablespoons cider vinegar
1/2 teaspoon salt
1/2 to 1 teaspoon crushed red pepper
1/2 teaspoon black pepper
2 garlic cloves, peeled
1 (1-pound) pork tenderloin, trimmed
Cooking spray

INSTRUCTIONS:

  1. Prepare grill.
  2. Place first 7 ingredients in a blender or food processor; process until smooth.
  3. Insert a meat thermometer into thickest portion of pork. Place pork on grill rack coated with cooking spray; grill 16 minutes or until thermometer registers 160° (slightly pink), turning pork occasionally. Place pork on a platter, and let stand 5 minutes. Serve pork with sauce.
