Garlicky Roasted Potato Salad

Yield: 8 servings (1 Cup each)

Comments from a PA Kitchen: Mash the roasted garlic cloves up into the dressing for the best flavor. Even non-potato salad lovers will love this!
INGREDIENTS:
3 lbs medium-size red potatoes, quartered
1T vegetable oil
1 T stone-ground mustard
2 tsp coriander seeds, crushed
6 garlic cloves, halved
1/2 C shopped fresh parsley
1/2 C plain low-fat yogurt
1/3 C thinly sliced green onions
3/4 tsp salt
1/4 tsp black pepper
INSTRUCTIONS:
- Preheat oven to 400.
- Combine first 5 ingredients, tossing to coat. Place in a shallow roasting pan. Bake at 400 for 30 min or until tender, stirring occasionally. Cool to room temp.
- Combine parsley and next 4 ingredients in a large bowl. Add cooled potato mixture, and toss gently. Serve at room temp or chilled. Garnish with green onion, if desired.
