Fiesta Rice

Vegetable Cooking Spray
1 teaspoon vegetable oil
1/2 cup chopped sweet red pepper
1/4 cup chopped onion
1 clove garlic, minced
1 1/4 cup no-salt-added chicken broth, undiluted
1/2 cup long-grain rice, uncooked
1/2 cup frozen whole kernel corn, thawed
1/2 cup commercial no-salt-added salsa
1/2 cup drained canned black beans
1 tablespoon chopped fresh cilantro
1/4 teaspoon salt
Orange slices (optional)
Fresh cilantro sprigs (optional)


  1. Coat a large saucepan with cooking spray; add oil. Place over medium-high heat until hot.
  2. Add red pepper, onion, and garlic; saute until crisp-tender.
  3. Add broth and next 3 ingredients. Bring to a boil; cover, reduce heat, and simmer 20 minutes. Remove from heat; let stand 5 minutes or until liquid is absorbed.
  4. Stir in beans, chopped cilantro, and salt. If desired, garnish with orange slices and cilantro sprigs.
