Chocolate Raspberry Crème Brulee

Comments from a CA Kitchen: Wonderful mix of flavors between the chocolate and raspberries (always a winner!) and the carmelized crust.

INGREDIENTS:

1 cup 2% milk
1/2 tsp vanilla extract
2 tsp unsweetened cocoa powder
1/4 cup + 1 Tbsp packed brown sugar
2 egg whites
1/2 cup fresh raspberries

INSTRUCTIONS:

  1. Preheat the oven to 300F. In a medium bowl, whisk together the milk, vanilla, cocoa and the 1/4 cup brown sugar, then blend in the egg whites.
  2. Divide the raspberries between two 1-cup ovenproof molds and pour in the milk mixture. Place the molds in a baking dish and pour warm water into the dish to halfway up the sides of the molds. Bake in preheated oven for 45 minutes, or just until set. Refrigerate for several hours, or until thoroughly chilled.
  3. Just before serving, preheat the broiler. Sprinkle the 1 Tbsp brown sugar in evenly over the top of each custard. Broil about 2 inches from heat until sugar is melted and crisp, about 20 seconds, being careful not to burn it. Let cool & serve.
