Baked Shrimp in Chipotle Sauce

Comments from a cook in CA: This was awesome. Served it to 6
for dinner. Did not have shrimp so I used scallops, but next time
will do it with the shrimp. The sauce is really good – next time I
will make brown rice perhaps or maybe polenta or couscous which are
friendlier than the suggested French bread. Very easy.
INGREDIENTS:
1/4 cup unsalted butter
1/4 cup dry red wine
1 1/2 tablespoons Worcestershire sauce
1 chipotle chile canned in adobo -- minced, plus 2 to 3 teaspoons adobo sauce
1 clove garlic -- minced
1 1/2 pounds medium shrimp -- not shelled
INSTRUCTIONS:
- Preheat oven to 400 degrees.
- Melt butter in a saucepan and stir in wine, Worcestershire sauce,
chipotles, adobo sauce, garlic, and salt. Toss shrimp with sauce in a
large shallow baking dish and bake in middle of oven until shrimp are
just cooked through, 10 to 12 minutes, stirring occasionally.
- Serve with a baguette to sop up the sauce!
