Chicken Butter

Comments: Don't let the name of the recipe scare you. It comes from a lady named Mrs. Butter. I have used this recipe for years and gotten many compliments. The combination of tastes is wonderful and unique. Enjoy!


1 10 oz jar of red currant jelly
1 T cornstarch
1-2 t allspice
2 t worchestershire
2 T lemon juice
1/2 t salt
1/4 t pepper
1 lb skinless split chicken breasts or 1 lb skinless breasts and thighs


  1. Dissolve and melt first 7 ingredients in a sauce pan. Pour over chicken.
  2. Bake at 450 for fifteen minutes and 375 for 1 hour in uncovered pan. Baste regularly. Serve with wild rice.
