Spicy Apple-Glazed Chick 'n' Grits Gorgonzola

Yield: 4 (1 cup grits, 3 ounces chicken, and 1-1/2 teaspoons green onions)

4 (4-ounce) skinned, boned chicken breast halves
Cooking spray
1/4 cup apple butter
1/4 cup spicy brown mustard
1/4 teaspoon salt
1/4 teaspoon ground red pepper
1/8 teaspoon black pepper
Gorgonzola Cheese Grits (click for recipe)
2 tablespoons chopped green onion tops
Fresh oregano (optional)


  1. Preheat oven to 350.
  2. Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; flatten to 1/2-inch thickness using a meat mallet or rolling pin. Place chicken in a baking pan coated with cooking spray.
  3. Combine apple butter, mustard, salt, red pepper, and black pepper; brush over chicken. Bake at 350 for 20 minutes. Cut chicken into 1/2-inch-thick slices.
  4. Spoon Gorgonzola Cheese Grits into each of 4 shallow serving bowls. Top with chicken; sprinkle with green onions. Garnish with oregano, if desired.
